If you were to step into our home for just a minute, you would understand Ross’s typical role. He keeps everything running smoothly. He is our domestic engineer. He’s the main chef, driver, cleaner, peacemaker, landscaper, maintenance, mechanic, the list goes on and on. Most importantly, he’s the stay-at-home dad to four kids, two cats, and a dog. Life threw a wrench into our plans with his uveal melanoma diagnosis. We suddenly had to make space for medical trips in our already hectic routine. We also had to adapt to new routines and a lot of unknowns.
Even though his diagnosis shook us, Ross has this knack for turning obstacles into something manageable. So, he set aside two days to batch-prep crockpot dinners. He thought ahead to make sure we would still have meals ready. By the end of it, we had over a month’s worth of dinners, all packed and frozen. It’s hard to express how significant those meals are. Knowing we’re covered on the dinner front lifts one big weight off my shoulders.

We tried our first meal last night: Garlic Peach Chicken. It was delicious, and yes, Ross nailed it yet again. (I don’t cook, so let’s just say my bar for “delicious” is pretty low if I’m the one in charge.) A friend asked for the recipe, so I figured I’d share it here, too, in case anyone else wants to try it. It’s an easy one. We have a lot on our plate, and easy is exactly what we need right now.

Garlic Peach Chicken Recipe
Serves 6 | Approx. Cost: $10
Ingredients
- 2 lbs boneless, skinless chicken breasts
- 16 oz frozen peach slices
- 1 red onion, sliced
- 3 Tbsp brown sugar
- 2 Tbsp soy sauce
- 1 Tbsp grated ginger
- 1 tsp black pepper
Instructions
- Label a gallon-sized freezer bag with the recipe name, date, and cooking instructions.
- Place all ingredients in the bag, seal, and freeze.
- To Cook: Thaw overnight in the fridge, dump into a slow cooker, and cook on low for 8-9 hours. Literally, that’s it!
- Serve over rice and enjoy.

In between travel for doctor visits and everything else going on, it’s these little things Ross does that keep us grounded. We don’t know exactly what’s coming. Having meals that remind us of him when we’re home feels like a small win. For now, we’re focused on the next steps. We are keeping our heads (and hearts) above water one day at a time.
