Ross is a die-hard fan of ham and pineapple pizza. For as long as I’ve known him, it’s been his go-to pizza order. Sweet pineapple with savory pork is his idea of a perfect combo. When he found this recipe for Crockpot Pineapple Pork Chops, he felt like he’d found a way to bring that favorite flavor home in a new, hearty way.
He prepped this frozen crockpot dump meal before heading out for treatment, knowing it would be easy to cook. We are so grateful for the people in our circle who brought food to our family while Ross and I were both traveling. With me here, though, I am feeling the need to keep home-cooked meals a routine. Even if it comes by way of the slow cooker. I am not a chef, by any means. I can make grilled cheese sandwiches, scrambled eggs that once dreamed of being an omelet, peanut butter and jelly sandwiches. The standard playlist. I can follow instructions but with these meals, all we have to do is pop it in the crockpot in the morning, and by dinner, we have a savory-sweet meal. This dish is a comforting favorite—especially when we’re all missing him. But we didn’t have to miss him because he was home to enjoy this one with us!
So, without further ado, I give you:
